Brettanomyces and Dekkera spp. ferment D-glucose to ethanol and CO 2 faster in aerobic than in anaerobic conditions Much acetic acid is produced via an NAD + -aldehyde dehydrogenase. Consequently, anaerobically, the high NADH : NAD + ratio inhibits glycolysis
