Compositional data and properties of Romanian wine varieties - A statistical analysis

Statistical analysis is a powerful tool discriminating between wine compounds that determine their quality. In this study, several wines were analysed considering both their composition and properties, various types, and production year were compared. Usually, red wines have proved higher amounts of polyphenols (up to 1761 mg gallic acid equivalent/L wine), flavonoids (up to 73 mg quercetin equivalent/L wine) and anthocyanins (up to 266 mg cyanidin glycoside equivalents/ L wine) than rosé wines. For selected wines, physicochemical parameters were determined. Based on multivariate data analysis, using principal component analysis resulted that the best cumulative properties (PCA score and antioxidant properties) are found for the 2020 Feteasca Neagra and Cabernet Sauvignon wines, while the Pearson correlation of climatic variables with specific secondary metabolites revealed that insolation and UV index enhance polyphenols content.
