The Agronomy of the Kiosk: How Kenyan Streets Rewrite the Chemistry of Gomba Gum

This white paper examines how informal retail environments in Kenya actively transform the physicochemical properties of low-cost chewing gum, using Gomba gum as a central case study. The paper argues that product quality is not a fixed outcome of manufacture but a fragile achievement of storage, continuously rewritten by exposure to sunlight, fluctuating temperature, ambient humidity, dust, and volatile organic compounds from nearby goods such as soap and fuel. Drawing from food science, packaging science, and soil science analogies, the study explains how moisture migration and aroma sorption alter gum texture and flavor, shifting it from stable to brittle or soggy while introducing chemical off-notes. The kiosk is therefore reconceptualized not as a passive point of sale but as an uncontrolled secondary manufacturing environment. Framed through a Baudrillardian lens, the paper further interprets open display practices as a simulacrum in which the visual representation of abundance replaces the integrity of the product itself. The work concludes with practical recommendations for retail handling, emphasizing packaging integrity, thermal control, and spatial separation from odor-emitting goods. Ultimately, the paper positions chewing gum not as a trivial confection but as a chemically sensitive material whose final identity is co-produced by its retail microclimate.
