Gastronomic tourism in the south of Russia: an analysis of historical precondition

Gastronomic tourism is currently one of the most promising areas for the development of domestic tourism. Tourists are increasingly trying to join the local cuisine, get acquainted with traditions and culture through the authenticity of national dishes. The formation and development of gastronomy in each region was undoubtedly influenced by the peoples who lived in these territories at different times. The authors analyzed the concept of gastronomic tourism and the cultural heritage of the region to identify the key factors influencing the development of gastronomic tourism in the Rostov region. The study identified the ethnosocial communities that lived in the Rostov region, as well as the specifics of their national cuisine, which is still reflected in the dishes offered in the region's restaurants.
