Solar drying is a good and a sustainable method used in preserving agricultural produce though the traditional open sun drying method has issues based on low efficiency, lack of quality control and limited weather dependence. The present research offers the design, fabrication and experimental study of an improved type of cabinet-based solar dryer that is combined with a polycarbonate sheet and thermal energy store to dry brinjal (Solanum melongene). The suggested system integrates a polycarbonate sheet drying chamber, forced air circulation and each of the following thermal stability enhancements such as a combined latent sensible heat storage system which uses phase change material (PCM) and high heat capacity material (HHCM) which is incorporated to enhance the thermal stability. Similar experimental studies involved three drying setups, that is, open sun drying, cabinet drying without PCM, and cabinet drying with PCM-HHCM. The dryer was tested on the basis of temperature change, solar radiation, rate of removal of moisture and time taken in the course of drying. Findings reveal that PCM-HHCM integrated dryer has gained the higher and more constant drying temperature and the highest drying temperature of about 72° C in contrast with the other settings. The increased thermal retention was a great boost in the speed of moisture removal and the time taken to completely dry brinjal was only a day long in a daylight cycle. The paper shows that the integrated impact of the polycarbonate sheet refraction and thermal energy storage is effective in enhancing its efficiency in drying, including the quality of products and thus the proposed system is applicable in the small scale of farming. (by using polycarbonate sheet the UV rays are not enter into the dryer so it will maintain the vitamin content present in the food product why because the UV rays affect the vitamin content in the food). Using PCM-HHCM to increase the drying time it will reduce the drying time and give more efficiency compare to open sun drying and cabinet solar drying).
